At Blessings of Hope, our volunteers are more than just helpers—they’re the heartbeat of everything we do. They are the hands and feet behind the mission, dedicating their time, talents, and compassion to serve those in need. And during National Volunteer Month, we’re taking a moment to shine a light on the amazing individuals who make our work possible. This week, we’re excited to introduce you to one of those inspiring volunteers: Eric Gingrich.
For Eric, food has always been more than just a necessity—it’s been a calling. With a long background in the food industry, he’s seen the vast amount of edible food that gets discarded daily. But instead of turning a blind eye, Eric decided to do something about it.
Twice a week, you’ll find Eric volunteering in the Dry Selection area at our Lancaster location. With a sharp eye for merchandising, he brings order and intention to the space, carefully organizing displays and making sure food is presented in a way that’s accessible and efficient for partner ministries that visit us for their outreach efforts.




But to Eric, this work is about more than neat shelves and tidy aisles—it’s about impact. “What Blessings of Hope is trying to do here really resonates with me,” Eric shares. “Connecting people who need food with food that otherwise would go to waste.”
Eric’s story is a powerful reminder that volunteering is more than just giving time—it’s about transforming lives. Every box he organizes, every display he builds, helps get much-needed nourishment into the hands of families and communities who need it most.
He’s not just moving food. He’s moving hope.
